Potato Crust Taco Pie

Do you and your family love tacos? Have you ever run to the grocery store and picked up every ingredient to make them, but somehow forgot the hard shells? Well, then this Potato Crust Taco Pie recipe was created just for you. By switching out a pre-made crust for a homemade one, you can increase the healthy factor of this dish. Let us not forget, also, that this pie tastes like a taco made by God himself.

Recipe makes 6-8 servings
Ready in half an hour with about 10 minutes of prep time

Ingredients
  • 1/4 cup butter
  • 2/3 cup milk
  • 1 package taco seasoning mix
  • 2 1/2 cups mashed potato flakes
    • Note: you may also use homemade mashed potatoes and leave out the butter and milk
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup medium salsa
  • 1 cup shredded lettuce
  • 1 medium tomato, chopped
  • 1 cup sharp cheddar cheese, shredded
  • Sour cream, optional
Preparation
  1. Preheat your oven to 350 degrees.
  2. If using mashed potato flakes, melt butter in a medium saucepan. Add milk and 2 tablespoons of taco seasoning mix. Remove from heat and add mashed potato flakes until incorporated.
  3. Press mixture into the bottom of a 10-inch pie pan. Bake for 7-10 minutes until the crust just begins to golden.
  4. In a medium skillet, cook onions and brown beef. Drain. Add the remaining taco seasoning mix and salsa. Cook until bubbly, then remove from heat.
  5. Pour into crust. Bake for 15 minutes or until the crust turns a deeper golden brown.
  6. Remove from oven and immediately top with cheese. Let cool for 5 minutes.
  7. Top with lettuce, tomato, and other taco toppings of your choosing. Cut and serve with sour cream.
